Arepas, Fajitas or Fresh Pasta: New Food Truck in Silver Spring Promises Lots of Flavor (PHOTOS)

There is a new truck in town: The Fajita Sub Factory.

imageMilvia Calvit, a Venezuelan with Italian blood, created the combination of Latino flavors and freshly made Italian pasta.

She opened a food truck in Silver Spring, located at the Gulf gas station on Colesville and Georgia Avenue, where she serves Latino food and soon pasta made from scratch with homemade sauce.

“My idea is to build this concept and make it a franchise. … I have my concept well established,” she said in a Spanish interview.

But this is not the first time Calvit embarked in the food business. She was the owner of Al Carbon in Rockville. In 2009, the restaurant was featured in the Washington’s Cheap Eats.

“I sold it and I took a sabbatical year to go to Europe and took cooking classes around Europe including France, Italy, and Greece,” Calvit said.

At the her food truck, the menu includes arepas, fajitas bowls, tacos, and much more; all of it with filling choices of steak, chicken, ceviche, and veggie meat. The Fajita Sub Factory is open for breakfast, lunch and dinner.

Calvit moved to the U.S. 25 years ago, but her dream was never to go into the restaurant industry.

“I studied accounting in my country, and I was a radio host, but I never thought that I would ended up in a restaurant,” she said.

The Italian side of the truck is called Pasta Oliva, and it will officially open on October 1. Calvit’s grandmother was Italian, so there is a lot of influence of grandmother’s cooking in Calvit’s truck kitchen. There, Calvit will offer lasagna, and fettuccine with sauce choices of napolitana, bolognese, alfredo and pesto.

She is also very proud of her homemade sauces, and the reinas pepiada- a popular sandwich with fillings of chicken salad and avocado. Arepa is a flatbread made of corn dough or cooked flour that is part of the Colombian and Venezuelan cuisines.

“They’re my recipes,” she said adding that people can also get fresh juices such as orange, mango, and pineapple.

The business was also featured in the blog “My Line is Red” and received praises for the imported cheese “queso de mano” from Venezuela and Calvit’s homemade sauces.

The Venezuelan chef only wants her customers to leave satisfied and happy after eating her food.

“So when they come I usually say ‘These are the artists’ applauses,'” she said adding “The quality [of my food] is not related with the prices. … Someone who knows the market knows how to keep low prices … My goal is to get my product out there for a long time.”

The food truck is open Monday through Friday from 8 a.m. to 8 p.m.
